Basmati rice, cardamom, cinnamon, cloves, saffron, fried onions and a potato arranged on stone

A walk through the kacchi pantry

A kacchi has a short cast list. There is nowhere for a tired ingredient to hide, so it is worth knowing what each one is there to do before you start shopping.

The rice

Long-grain basmati is the familiar choice, loved for its fragrance and for grains that stay separate. In Bangladesh, many cooks reach for small-grained aromatic rice such as chinigura or kalijeera instead, which gives a softer, more perfumed result. They behave differently in water, so use the rice your recipe was written for rather than swapping freely.

The whole spices

Cardamom, cinnamon, cloves and bay leaf build the warm base. Many recipes add mace, nutmeg or shahi jeera for a more floral top note. Whole spices release their aroma slowly, which suits a dish that cooks low and long. Fresh spices matter more than many spices: if a pod has no smell in your hand, it will add nothing to the pot.

The fried onions

Known as beresta, onions fried to a deep, even gold bring sweetness and a toasted edge. They go into the marinade and between the layers. Pale onions taste flat and burnt ones turn bitter, so this is the step that rewards patience at the pan.

The potatoes

In Dhaka-style kacchi the potato is not a filler. It is, for plenty of people at the table, the best bite in the pot. Fried lightly and often tinted golden before layering, the potatoes spend the cooking time soaking up everything around them.

The finishing touches

  • Yogurt tenderises the meat and carries the spices in the marinade.
  • Saffron steeped in warm milk gives colour and a honeyed aroma to the top layer.
  • Ghee adds richness and helps the grains stay glossy and separate.
  • Kewra or rose water, used sparingly, gives the floral lift people associate with a wedding kacchi.

None of these are exotic. What makes them sing is care: fresh spices, properly fried onions and good rice. Which ingredient would you never leave out? Let us know below.
